Mango Slaw (Back to Recipes)

Ingredients

1 large ripe fresh mango, peeled and chopped

3 T. fresh lime juice

2 T. canola oil

1 t. salt

Dash cayenne pepper

1 small head cabbage, thinly sliced

2 large carrot, grated

2 green onions, thinly sliced

1/3 c. chopped fresh cilantro

Directions

1. Place mango, lime juice, oil, salt and pepper in blender; process until smooth and set aside.

2. Stir together cabbage, carrot, onion, and cilantro in large blow; add mango mixture and toss to coat. Chill 20 minutes. Serve with fish, chicken or pork.
